Simple Pesto, Pepper and Blue Cheese Tart
I thought I would share this with you, as its so easy, simple and made up. Having forgotten to buy anything in for tea last night we had to make a tea out of what ever was lying around in the fridge..and hey pesto!
1 pre-rolled sheet puff pastry
Pesto – 3 table spoons
Passata or tomato puree – 3 table spoons
Yellow pepper sliced
Red pepper sliced
chunk of blue cheese
(or any other cheese i.e. mozzerella, Ricotta, cheddar all work)
Pre-heat the oven to 200C fan oven. Look out a baking tray, lined with baking parchment then unroll the pastry. Score a border into the pastry just under an inch in from the edge.
Spoon the pesto in blobs all over the pastry followed by blobs of Passata in between keeping inside border. Scatter the peppers, followed by the blue cheese all over.
Brush the outer border with milk for a nice crisp edge.
Place the tart into the oven and cook for around 15-20 mins until the pastry is nicely risen golden and the middle is bubbling/ roasting – serve hot with a nice green salad. Any leftovers are great in a lunch box for work! Mmm…
