Deep Chocolate Brownie Muffins
Hello! I hope you have had a good week so far, well its nearly the weekend! 🙂
Its certainly been busy for me work wise! Of course the weekend means its time for baking, well it is for me as theres normally something happening socially- any excuse I know!! So today I tried making My Gooey Chocolate Fudge Cake into muffins – and heres the result…. tempted? That perfect weekend indulgence or just to give to some one in need of cheering up – go on have a go at making these!

The only major addition to the recipe was once the cup cakes are full of cake mixture I added to each case some 2cm broken chocolate. (the mixtures runny so they sink in) 100g white and 100g milk chocolate in total.
Recipe makes 12, oven 160c for 30-40 mins
Butter cream frosting recipe:
250g butter (room temp)
500g Icing sugar/Powdered sugar
1 tsp vanilla extract
2 tbsp milk
100g plain chocolate melted
Whisk the butter until soft – slowly add the icing sugar until blended and soft.
Add the vanilla extract, 1tbsp milk and plain chocolate.
Keep whisking making sure to take a break using a spatular to bring up any sugar or butter stuck to the side of the bowl so there are no pale patches in your icing.
Add further milk until it reaches a spreadable consistency.
Now pipe or spread away till you have twelve beautifully iced cupcakes!
