This recipe that I have just made is a red velvet cake made with condensed milk. Having  friends coming over this afternoon, I needed something quick and easy – as I am not generally a very organised kinda person (I do try…honest!).

Red Velvet Muffin Cakes

Red velvet muffin cakes

Recipe
175 ml condensed milk
1 medium egg
2 tbsp cocoa powder
125 plain flour
1 1/2 tsp baking powder
100g butter
1tsp vanilla extract
4tsp red food colouring

pre-heat the oven to 180/200 fan. Place all of the ingredients in a bowl and using a hand whisk, whisk until light and creamy (2mins ish). Divide between twelve muffin cases and place in the oven for 12-15 minutes. Remove from the oven when the the sponge is springy to the touch.

Icing
75 butter (room temp)
175g Icing sugar/Powdered sugar
1 tsp vanilla extract
2 tbsp milk

Mix the butter with a wooden spoon or electric whisk until nice and soft, then gradually add the icing sugar until smooth and creamy. Add the vanilla extract followed by the milk until a soft piping consistency.

Cut the cupcakes in half across the middle – fill with a teaspoon of icing then place the other half on top. Pipe the rest of the icing on top of the cakes to create a spiral effect.
