Something for the weekend…

For one reason or another this week we have had to detox off caffeine, wine, and most carbs. Unfortunately some of which I think will have to be a permanent lifestyle change for us. So this is our treat for the weekend its not as healthy as as my previous Yogurt Banana Bread but definitely my favourite – perfectly moist and flavoursome!

Loaf Ingredients
175g light sugar
175g self-raising flour
175g butter
3 eggs
3 browning bananas
1tsp baking powder
2 1/2 tbsp poppy seeds

150g soft cream cheese (I prefer swiss Almat)
2 1/2 table spoons icing sugar

Per heat the oven to 180/ 160 gas mark 4 and line a standard size loaf tin. Place all of the cake ingredients in a bowl and whisk until just combined. Fill the the baking tin and place in the oven for an hour until a skewer comes out clean. Place on a wire rack and leave to cool.
To make the icing place both of the ingredients in a bowl and mix with a metal spoon until smooth, then spread over the top of the loaf followed by a sprinkling of poppy seeds.
