Autumn fruit recipes..
Last week was an absolutely manic week preparing for the start of term, doing all my usual invoicing, organising and starting production on my husbands latest album casing and cover. All made by hand – I must be truly mad!! Followed by a lovely quick (overnight) visit from my parents to drop off a rowing boat! But not just any boat! However being short on time Ill get into that on another post!
Having last sunday off work, we went foraging locally, picking up some damsons off a friends tree followed by an epic amount of searching around in our local hedgerows (whilst trying not to fall headfirst in the lake) to pick some early blackberries! So I have been busy last night and this morning making – Spiced Damson, blackberry and apple crumble, Blackberry Gin, Damson Gin and Damson and orange gin! Mmm…unfortunately the gins wont be ready for another three months – bring on christmas!
In the meantime…here is my crumble recipe…
Spiced Damson, Apple and Blackberry Crumble
1 large baking dish
2 medium bramley apples sliced
2 eating apples sliced
two handfuls of damsons stoned and cut
1 heaped builders mug of blackberries
1tsp Mixed spice
1/2 tsp Cinamon
50g sugar
Crumble
125g cold butter cubed
50g rolled oats
200g plain flour
125g demerara sugar
1/2 tsp Cinnamon
50g flaked almonds
Pre heat the oven to 180 / 200c. Place all of the fruit into the baking dish followed by the sugar and spice. Mix together until combined.
Place all of the crumble ingredients into a bowl rubbing with your fingers until a breadcrumb consistency is formed.
Spread the crumble evenly over the fruit.
and place in a pre-heated oven for around 40mins or until piping hot. Serve with cream or ice-cream..
