Stuffed roasted peppers..
This recipe was born of one night sat at a friends house wondering what on earth I was going to cook for our tea – not really fancying anything which came to mind. So we decided to combine our ingredients – when in the end we just needed three! (excluding the fresh green salad, and crusty bread!)
So all that is required for the main dish is a jar of whole long red peppers, raw chicken and Mozzarella – easy!!
This is how you do it..
Drain the jar of peppers, then cutting the chicken with scissors as you go stuff a pea size piece of mozzarella followed by a small thumb sized piece of chicken, then keep layering into the pepper until it is just full. Lay each stuffed pepper flat snug up tight against one another in a baking dish – any place spare mozzarella around the edges then bake at 180 for 20-30 minutes.
