A light supper of Smoked salmon with Horseradish Potatoes
Hello! I hope your all having a good week! Made this on tuesday night – its a great healthy supper or lunch seems an almost too easy recipe to blog about!!
2 handfuls of baby new potatoes cut into 2cm chunks
2 tablespoons of creme fraiche
1 tablespoon of jarred creamed horseradish
small handful of chopped dill
100g smoked salmon
toasted pine nuts
salad of lettuce, cherry tomatoes, sliced radish, sliced peppers and sliced grapes
Boil the potatoes for 10 to 15 minutes until tender, then drain and return to the pan. Stir in the creme fraiche, horseradish and dill. Serve topped with smoked salmon and toasted pine nuts with a salad on the side lightly drizzled with olive oil.
