Leek and Veg Soup
Just a quickie here! My emergency raid the refrigerator for odds and ends of veg soup! Super healthy and tastes fab – real feel good food!!
Ingredients
2tbsp olive oil
2 garlic bulbs finely chopped
2 sticks celery sliced
2 small onions chopped
1/2 fennel bulb sliced
¼ butternut squash cubed
1 medium potato cubed into 1cm chunks
1/2tsp dried rosemary
1/2tsp mixed herbs
1 vegetable stock cube
Place the oil, garlic, celery, onions, and fennel into a large heavy based pan and cook on low with the lid askew for around 10 minutes stirring frequently.
Add the potato butternut squash and herbs and stir for another 5 minutes.
Put the stock cube into 1.8 litres of boiling water then pour into the veg and simmer for 10-15 minutes until the potato has softened. Season to taste.
Either serve as it is (nice and chunky!) or use a hand blender to smooth it out.
Optional- but a must if you need warming up or just a big hug!
Served with cheesy bagels…
Pre- heat your grill toast the outer of each half of the bagels. Turn the bagels over and simply top with grated cheese. Grill for 1 to 2 minutes until melted. Half each half bagel and place around the soup as above to soak up some of the juices. yum!
